Carrots are always there.

What Science Tells Us About Carrots

The orange color of carrots isn’t just a color. It’s packed with beta-carotene, a fat-soluble pigment. This nutrient converts to vitamin A in the body, supporting vision, immunity, and skin health, and it has one fascinating characteristic.

Its absorption rate increases when consumed with fat.

That’s why when you sauté carrots in olive oil or roast them with butter, it’s nutritionally more efficient. Additionally, carrots have tough cell walls, so eating them raw limits the absorption of some nutrients. But when lightly cooked, the cell walls break down and nutrient absorption increases.

In other words, carrots can be nutritionally more efficient when lightly cooked rather than eaten raw.

Creating Balance Through Pairing

When you add cold, smooth yogurt alongside, warmth and coolness, sweetness and acidity create a quiet balance on a single plate. The yogurt’s acidity sharpens the carrot’s sweetness, while its creamy texture contrasts with the roasted carrot’s tenderness.

Plus, they have excellent storage life, keeping for 2-3 weeks in the refrigerator without issue. Just remove excess moisture and store them sealed, and they’re ready to use whenever you need them.

Recipe: Roasted Carrots with Yogurt and Herb Oil

Ingredients

  • 4 – 5 Carrots ( halved lengthwise into large pieces )
  • 2 Tablespoons olive oil
  • Salt and Pepper
  • 1 cup plain yogurt
  • A handful of fresh herb ( dill,parsley,mint, etc. )
  • A bit of lemon zest
  • Cumin or coriander powder (optional)

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. Coat the carrots evenly with olive oil, salt, and pepper.
  3. Place carrots on a baking sheet and roast for 25-30 minutes, until the edges are lightly caramelized.
  4. Finely chop the herbs and mix with olive oil to make herb oil.
  5. Spread yogurt on a plate, place the roasted carrots on top, and drizzle with herb oil.
  6. Finish with lemon zest and spices.
